This is a fantastic marinade for meats, tofu and fish. Note: if using fish, it should only be marinated for 30-45 minutes maximum.


  • ¼ cup Chef Laura’s Preserved Lemons, rinsed and pith removed (about ¼ cup chopped)
  • 1 ¼ cups thick yogurt
  • ¼ cup oil
  • 2 tbsp Chef Laura’s Mother Harissa spice blend
  • Salt to taste


  1. Place all the ingredients, except the yogurt, in a blender jar or food processor and blend until smooth.
  2. Add the blended spice mixture to the yogurt and mix through with a spoon (don’t blend). Taste and adjust seasoning as needed.
