This is a fantastic marinade for meats, tofu and fish. Note: if using fish, it should only be marinated for 30-45 minutes maximum.
- ¼ cup Chef Laura’s Preserved Lemons, rinsed and pith removed (about ¼ cup chopped)
- 1 ¼ cups thick yogurt
- ¼ cup oil
- 2 tbsp Chef Laura’s Mother Harissa spice blend
- Salt to taste
- Place all the ingredients, except the yogurt, in a blender jar or food processor and blend until smooth.
- Add the blended spice mixture to the yogurt and mix through with a spoon (don’t blend). Taste and adjust seasoning as needed.
